Soondubu refers to soft or silky tofu, as opposed to the firmer tofu that Westerners are most familiar with.

All three vowels in the term soondooboo are the same — “oo” as in the English word “moon.”

A popular Korean stew that makes use of extra-soft tofu is simple called sundubu-jjigae (순두부찌개).
