HANSOL is a South Korean chain of restaurants operated by Hyundae GreenFood. This location in Koreatown LA opened July 23, 2015, in the space formerly occupied by Madang 621 BBQ at the Madang Plaza. The showcase dish is naengmyeon, including bibim-naengmyeon.
Naengmyeon (“cold noodles”) have traditionally been considered to be either of the Pyeongyang style or Hamheung style, both names being their places of origin in North Korea.
Hansol has received kudos from food critics for breaking convention and daring to combine the finer points of each style in their own house speciality.
The chain’s method of preparing their star dish involves making fresh daily the noodles made of sweet-potato flour and simmering the broth for more than 10 hours.
