What is Pink Noodle Soup?

Yen Ta Fo is a distinctively pink noodle soup that is a beloved street food in Thailand. The pink color comes from the addition of fermented red bean curd, which gives the broth a sweet-tangy-spicy flavor profile.

The noodles typically used are wide rice noodles called sen yai, but vermicelli or egg noodles can also be used.

Common toppings include fish balls, shrimp, squid, fried tofu, water spinach, and sometimes coagulated pork blood.

The broth is made from pork or chicken stock, seasoned with soy sauce, fish sauce, sugar, and white pepper. The signature Yen Ta Fo sauce is made by blending ingredients like red bean curd, Sriracha, vinegar, sugar, garlic, and chilies.
